I just wanted to post a quick update since there's not much here on these US Elite kits. I started their Chardonnay about 2 months ago. It fermented down to .994 with no problems. The instructions said that it was not necessary to degas but I did anyway. It had gas in it but not as much as other kits I have made. I added K-meta, fined it with the included Super Kleer and added some oak cubes to the carboy for bulk aging. As of last night I racked the wine off the fining agent and it is almost perfectly clear with the flashlight test. I tasted a sample and I have to tell you I am really impressed! I've made a lot of chardonnay kits including Brehm juice buckets and this wine at this stage is one of the best I have ever made. These kits are pretty inexpensive too. If you haven't made their kits I'd say they are worth a try!
