I am making a Selection Limited Edition New Zealand Merlot. In the instructions it says after 5-7 days it will be time to check the SG, it should be 1.010. What if the SG is 1.010 after 3 days, do you still leave it for 5 days or are you ready for the first racking?
 
You are ready for first racking. This is why you should always rely on your hydrometer, and not the estimated number of days. You want some fermentation to be left to develope the protective layer of co2 on the top of your carboy.
 
That' right. Always rely on your hydrometer. The instructions are just a guideline.
