My vr sangeovese is just short of 1 year old. It bulk aged for about 6 months and then we bottled some for gifts . We put 12 on the rack for aging in the bottle.
This is actually a question about what happened to the wine over time.
It goes down so easily now. the sligtly bitter tase that was there when new is gone.
I read so many coments here about mellowing.
Please folks just give me some input on what is happening,
I read a lot and still know next to nothing.
I have 3--3 gallon carboys((((some red made from fully reconstituted welches-- white grape peach welches, and 3 gallons of some redneck special i made for the gypsies thatIm thinkingmay make a nice light rose type to sip at meals)))) bulk aging some raspberry in bottles and someapricot in bottles to.
The incentive to age wine is increasing now.
I think i am getting ready to try some higher end kits soon.


Please comment. I need INPUT PLEASE
