I've been buying 6 gallon juice buckets from a local supplier. Other than using a recommended yeast for the fermentation, I wondered about tweaking the juice for the TA, body, etc.
For instance, I have carboys of Montepulciano and Malbec bulk aging right now. Is there a reference for each variety with the targets, recommendations, etc?
