Started some Muscadine wine

This is my first try with muscadine. I got to pick my muscadines for the 2012 season before the birds got them. In 2011 the birds ate every one of them in less than a week.
Here is it. I hope I done it right.

15# frozen berries, smashed
7.5# sugar
enough water to make a good 3 gallons total.
3 campden tablets
3tsp yeast nutrient
2tsp pectic enzyme
RedStar Montrachet

02/05/13 pm Smashed berries and placed in a fine mesh bag into primary bucket. Add sugar, water, campton tablets and yeast nutrient. SG 1.092@80f
02/06/13 Add pectic enzyme and yeast
02/08/13 pm SG 1.08
02/12/13 am SG 1.035
02/13/13 pm removed bag with smashed berries
02/17/13 am SG 1.014.

I will transfer to secondary when the SG gets below 1.01.
I plan on fermet to dry which should give me a good 12%
Then when no bubbles in air lock let bulk age for 6 months racking at least 2x if not more.

Does this sounds like a good plan? See any problems that may arise?

Sounds pretty good to me, You might be a little low on the amount of muscadines per gallon.. However, A lot of people like to go light with muscadine. Make sure you have a carboy that can fit your three gallon yield
 
I have 12 gallons bulk aging. Your plan looks good to me, however, I used around 8 lbs. per gallon. I do think Muscadine needs to be sweetened for best results. I plan to experiment with sweetening with mine when it's finished aging. Good luck.
