I have 2 selection Australian chardonnays which are in the carbouys awaiting the next stage which is degasing and stabilisation
It says on the instructions to do this after 10 days from the previous racking. My problem is i have miss timed it with a holiday and i actually go away on day 9
Is it generally ok to leave it in the carbouy for an extra 8 days or so?? Or will somethng happen to it!
I would greatly appreciate your wisdom on this as i am to to the winemaking and dont want to risk wasting £150 of wine kit!?
