I just pressed 120 lbs of St. Pepin grapes and I am trying to decide on a yeast, any recommendations.
 
I use Red Star Cotes des blancs yeast as I have for 5 years. It is one of my best sellers and blending wines. Congrats on getting this many. What numbers did you get (brix,pH,TA)?
 
I crushed 180 lbs of Foch and the St. Pepin last night after picking earlier in the day. I just finished pressing and carrying all of it into the basement. I added the Campdon last night and tonight I will take the spec. on acid a SP Gravity. I will let you know.
