Sorbate

So I added the sorbate to my carboys and just found out that the store is out of the bottles that I need to bottle. They will have them in 4 days. Do some of you wait after sorbate to make sure it is doing its thing or do you generally bottle right after it is added?

You will be fine waiting. I generally wait much longer than for days, like months.

Does it actually help a bit to wait?

I think it helps to wait. Generally, I add the sorbate, wait a bit, then do my backsweetening. If I am not adding sugar back in, I don't add sorbate.

That said, if you are doing a kit, follow the instructions as nearly as you can.

If you see it bubbling and obviously fermenting after 3 days, you'll be darn glad you're waiting 4.
