I recently bought a small 1 gallon wine kit to have a go and make some wine. I decided to get the smaller kit as a test and sort of as a trial run. My plan was to run it as the kit instructions said and then if it turned out ok buy the larger kit (maybe later I'll move onto more adventurous stuff). So I'm mid way through fermentation kit says this should take 10-15 days I'm looking at the 15 day side of it I'd say because I've had pretty steady temp control at 21C. The next stages are the addition of clarifying agent and stabiliser followed by shaking to degass a few times a day for 3-4 days.
My problem is that I will now be away for 10 days when tis step is to take place. I was thinking of racking the wine into another demijohn and leaving it for the week or so I'm away and then continueing as normal.
does this sound ok? Or should I just leave it in the primary for the extra week or so?
