Acid lowers the pH and makes the SO2 more effective. My current K-meta solution recipe is 2 to 3 Tbsp K-meta and 1 Tbsp acid. Tartaric is supposed to be best, but any wine acid that lowers the pH works. I have a large bag of acid blend, so I'm using that up.Why add the citric acid? I don’t understand the purpose
