I have just made 20 ltrs of Solomon Grundy Sav Blanc, the final SG is .992 it tastes a little tangy possibly a bit tart has anyone made this white wine, does it age, I have degassed, any help will be appreciated.
Sauvignon Blanc can be drunk young, but good quality ones can age for 5+ years.
I suggest bulk aging for 6 months. Based upon previous experience, 3 to 6 months in the bottle will produce good changes, and it should be drinkable for several years after that.
