So you are saying that you want to run your filled bottles through a dishwasher in order to sterilize the wine??

If so, that level of excessive heat can not be good for wine. You would be far better off using sorbate and/or k-meta.

If you are going for organic wine, and do not want to use chemicals, then I suggest that you simply bulk age for a year or two before you bottle.
 
This is for cider and I want to stop the fermention before it is totally dry and have some CO2 but the favors are off so I may need rack the 3 gallon carboys and treat this. John T thanks for all you help and advice you have been very helpful to this newbie.

You are more than welcome. Look into using sorbate.
