Mosti Mondiale Renaissance Chianti step 3 proonged

I have a Renaissance Chianti that I have completed to step three. ( degassed added K-meta, silligel and liquidgel) Unfortunately I was called to go work and will be gone most likely for 3 weeks. My question is my wine going to be ok? The instructions say to transfer after 8-10 days.

It will be fine but get it off there as soon as you get back!I always let it sit longer then what they suggest to let the lees compact so as to get more wine off the lees without disturbing them.

As Wade said you will be OK...At this point, time is on your side ....It will be OK to wait the three weeks....Good luck and have fun with this hobby..
