My accuvin test showed that my malic acid level was <30 or close last weekend. I am letting my cab sit until this weekend before racking to be sure it is complete (no more tiny bubbles so i think i am ok).

My question is...after i adjust my SO2 and other levels and then rack into a new carboy, do i use a solid stopper or an air lock? I thought it was a solid stopper but then i read to use an air lock for a week before switching to the solid.

Figured i would ask just to be sure.
thanks!

I'm pretty sure you can use an airlock as long as you like, just keep it filled up and you r wine should be be fine.

Use an airlock! I have seen barometric changes cause expansion that will raise your wine into your airlock so keep something sanitary in there like vodka or k-meta solution. If you had a solid bung in there it would pop it out and who knows when you would notice this or what could get in there before you do!!!!!!!
