Hello I have made a few batches of mead, but this will be just my third try at Wine. Ive made one Quince wine, one Dandelion wine and now trying the quince again. I am using the recipe found here:
http://winemaking.jackkeller.net/reques51.asp - as I THINK it is the one I used before. I was sure I posted the whole process on my blog at the time but can't seem to find it and its been 4 years so it feels like I'm starting over.
My question is should the quince be peeled before being grated? It definitely adds to an already long process of grating enough quince for a 5 gallon batch but I am interested in anyone else's opinion and tips.
