Just racked my WS Super Tuscan and the sulphite is 4.8g, which according to Google searches it is equivalent to 0.96 teaspoon. My wine total came down at 5gal and 1 750ml bottle after racking.

Isn't that too much sulphite? We always say 1/4 tsp per 5 gallons.

Lastly, I have a 6gal batch that need to add kmeta, how much exactly?
I do not have a grams scale... :ft
But have a small measurement plastic spoon and 1/4 tsp looks small.

Varis, I have been uncomfortable with the quarter teaspoon formula. The free S02 level should be adjusted according to pH among other things. That's why I started to measure S02 instead of just adding a quarter teaspoon every few months of aging. Maybe this degree of fussiness is overkill but I feel better about it. G
 
What your forgetting is that the first time you add sulfite ~50% of it is bound instantly to O2 in the wine, and even the wine itself leaving not all that much left over to protect the wine right off the bat. Toss in the package and fuggedaboudit!

How about the 6gal, I will add a bit over 1/4 tsp
