I am ready to bottle my first batch (WE Italian Pinot Grigio). I have read about adding K-meta when bottling but am unsure how to add it. Should I have already added it or do I just dissolve in some water and add? Do I stir it?

You can draw out a half a cup full of wine, add 1/4 teaspoon of K-Meta, mix it up and pour back in the carboy. This increases the amount of sulfites in the wine and allows you to keep it for a couple years in the bottles. Best to gently stir it in ionce in the carboy, but if you haven't racked off the lees, you will stir those upa nd need to wait. What some gusys do if you have sediment is to rack back to your bucket before adding the k-meta and bottle from there. It keeps you from sucking up a lot of lees also(or at least helps).
