Would it be problematic to do the primary fermentation of 5 liters of wine in a 30 liter bucket? Is that too much air for the liquid to come into contact with?
 
That is just fine. I normally do 23 litres in a 46 litre pail.

Just make sure you transfer to a smaller jug after the main ferment dies down.
