port yeast to use with Touriga?

I hope to purchase 100lbs of touriga grapes in Sept with intentions of making both straight wine as well as attempting a port. Any recommendations on a yeast to use? Should I split the juice at the start and use two different yeasts, or just pull off a portion at 1.040 for port and use one yeast?
