I'm about 1/2 gallon short of neck on a 5 gallon carboy. Given fermentation(4 weeks in) has ceased at .990 what should I top off with for best results? Meaning avoid contamination and not mess up taste. Thoughts?

Thanks!

In a perfect world, you'd top off with another plum wine you made, or rack down to a 3 gallon carboy, 1 gallon jug and a 1/2 gallon jug. If none of those things are in your cards, you'll need 2-1/2 bottle of something similar, maybe a rose' or some other lightly colored, lightly flavored wine.
