Just finished fermenting 20 gallons of pinot noir rose and my ph reading is 3.31. Is this decent or should I look at bumping it up to around 3.5?
 
Agree with @salcoco . At this point you'll want to taste it for the acid balance you are shooting for. If you can, measure the TA as this is the acidity you taste, not the pH. If it is too tart, adjust the TA down and be sure the pH doesn't go over like 3.55.
