Hi, I plane to start a batch of Peach Winethis weekend. I have heard that it is a difficult wine to get right. I would like any advice. I have added bananas and I plan to age 9 months pluss. Not sure about oak? I like oak. I am just not sure if it would be good in peach. When the wine is finished will I taste a banana -banana flavor or a full body peach? Should I use less banana ? Thanks,

2 1/2 lbs. peach ( with skin, without pit)
1/2 lb sliced banana
1 1/2 tsp. acid blend
1 tsp. pectic enzyme
1/4 tsp. tannin
1/2 tsp. energizer

SG = 1090

Bananas dont have much flavor so at that ratio you shouldnt taste the Banana. Peach is only a problem that I know of with clearing.
