I kept it under the house so I wouldn't have easy access to it. I also drank lots of commercial wine. I just bottled 6 moregallons of Chianti last week and I wonder if that wine will make it to the one year mark. I hope my Montepulciano comes out as good. I need to bottle that soon,so as to free up another carboy.
That last bottle needs to be slowly savored or saved for a special occaision. Just try to forget its there. Make more.......
