I added oak cubes to my mead and they floated for a little while but when I checked on it today, the cubes are sitting on the bottom of the carboy. How does that work? They are wood, right?

Oak will float for awhile until they absorb enough wine to sink. They will work thru the aging period. You may want to rack or gently stir before bottling so the oak flavor gets distributed thru out the wine. You will have a more oaky flavor at the bottom than at the top and moving your siphon tube back and forth to mix it up as you bottle will give you different flavore in the bottle.
