So I do have some friends who love wine...but for one reason or another do not drink anymore.


How would one go about making wines for these folks with almost no alcohol, but enough sugar and flavor to make it interesting?


Just curious...
 
I've only seen commercial de-alcholized sparkling wines, which is basically sparkling grape juice with enough acid to give it a kick.

I know, with beer, you can rid yourself of the alcohol with freezing it, and draining off the stuff that doesn't freeze. Of course, you'd have to dispose of that stuff, since freeze distillation is illegal. But beer has enough taste and structure (unfermentable sugars) to make this work. I'm not sure how wine would turn out.
