I popped my first cork of a sparkling wine I bottled a month & half ago.. I am surprised that my first attempt at this came out so well... I love 'champagne' so knowing my first try came out so well means that the 5 gallons of banana that I am turning into 'champagne' will come out good..

Good for you, I'm have not tried making champange or sparkling wine as of yet, there seems to be a lot of work attached to it.
 
this still had sediment in them.. Im going to try a method of disgorging I came up with myself using dry ice but most I plan to rack into clean bottles with a simple syrup made from non-ferm sugar and a bit of dry wine to top off with...

It is a bit of extra work but I actually enjoy bottling wine so this extra step is new and interesting to me.. Plus like I said, I love 'champagne'...
