On the left fresh Blueberry recently picked. Sg was sitting at 1.030 so I racked it to a secondary this morning. On the right a Mosti Mondiale Vinifera Noble Chardonnay that I am choosing to bulk age for a few months. I am not too worried about head space because I shoot in a good blanket of CO2 that I bought at my local Liquor Store.
The BB fermentation has been very slow, but no worries. Anyone doing one of the Mosti Mondiale Vinifera Noble fermentation is very quick. At least it was for me.
