Need some advice with a couple of things - first of all I have a IM
Blackberry Cabernet going right now. Did not want it too
sweet so I added 1/2 the F-pack up front and also sugar to bring
the SG to 1.085. (about 11%). This was started 8/28 and today the
SG was .994. (about 9 days). Should be the same tomarrow so
will add the rest of the packets (ie 2 3 4). BUT it seems to
taste pretty good right now and has a decent nose QUESTION do I need to
add the rest of the F-PACK? Will this increase the sweetness too
much? By the way what is in the F-Pack? Will I lose some
blackberry flavor by not adding or should I just add?????? This
is in a Imperial Carboy - 6 gallon - (about 7.5 gallons) so I did add 1
- 750ml bottle of commercial cab to raise the liquid level.
Secondly - tomarrow I pick up 2 carboys of must. This is from the
friend that I mentioned has the Syrah and the Merlot grapes. I'm
going to get an Imperial Carboy of each - probably 7.5 gallons.
This will be right out of the primary open fermenter - gonna pump right
into the bottles. He stated that the ph was just a little high;
the acid perfect and brix is great. I will have numbers
tomarrow. I'll let you know what they are and I will probably
need a lot of advice on this. I'm thinking that after the SG gets
to the right levels I will rack into 2 - 5 gallon carboys (1 of each)
and then with the balance of the wine do some blending and maybe ya'll
can make some suggestions on the blend ratio. Thanx for all your
past, present and future advice.
You all are great and I really am enjoying this forum and all of the camadarie (sp)
by the way - www.highgravitybrew.com seems to have some RO Chileian
Malbec - at least in their product lineup. Maybe they will still
have some.
