I know that varietal/yeast pairing is common ... does the same go for LMF bacteria or will anyone do? Thanks ... Anything else I should know about inoculation and maintaining MLF?
The MLB have minimum and/or maximum requirements for things like:
Temperature
Free SO2
PH
Alcohol
So, you should be able to measure them or know them to make sure they are within the capabilities of the bacteria.
The variety of wine is not so important as the above.
