I have a question regarding PH and TA. Knowing that my PH will rise after malolactic is done , should I raise the TA in order to lower the PH , (for compensation) prior to adding the MLB?
Some of my reading indicates I should bring the PH to around 3.5
My Merlot PH is 3.63 and TA is .7
My cab PH is 3.6 TA .75
My PH is good now but don't want it going up to high.
Thanks in advance

If it were mine I would wait until it aged a little after MLF and then make the adjustments but that's just my opinion. I'm imagine it would be fine either way.

I agree with @mainshipfred the existing numbers look good, a post ML pH of 3.75 or so is fine, at that time you can adjust acid if needed based on taste.

Just for good measures, I agree with both of the above recommendations. Your numbers are well within the "good" range for starting AF and MLF. You should end up with a pH and TA that are quite manageable at the end of the day. I'd be very happy to have numbers in those ranges to start from!!

Thank you for your responses. I was hoping I had no need to adjust.
