I've noticed that I don't seem to see discussion on Mlf in the forums regarding wine kits.
Am I just not seeing the threads or is there something about kits that this does not need to be done?
I've read some info at UC Davis on Mlf and understand somewhat on why you would want to do this for certain reasons and that it can also just happen spontaneously.
Was hoping some of the more experienced here could address this for me.
 
Don't put a kit through MLF, Kits are balanced by the manufacturer, MLF would render the wine unbalanced, furthermore, if you follow the kit instructions, most of which have you add sorbate to the wine, it can have a real negative effect, it will often produce a fowl odor, usually a strong geranium to ripe fish smell.
 
What is MLF? I keep seeing it referenced...

I wasn't going to put my kit thru Mlf, I was just curious.
I am assuming as well that I don't really need to worry about ph with a kit?

There are no dumb questions. (well some have been answered many times)

Malolactic Fermentation. The conversion of Malic acid to Lactic acid. Malic is the green apple taste, somewhat harsh, Lactic is much smoother.
