I'm going to be starting a Chilean Malbec kit from Master Vintner tonight which will be my first kit wine. I have two questions:
1) I read through the "Top 10" advice thread for kits. Great advice. I would love to have ideas on how to make the kit wine even better. So, I plan on over oaking and bulk aging it longer than they say. If you have more tips that would be outside the instructions...I'm all ears/eyes.
2) I have a 7 gallon primary fermentation bucket. I'll be filling it up to the 6 gallon mark. Is the one gallon of headspace going to be enough to prevent it over flowing when it starts fermenting?
