Didn't learn my lesson last year when I lost a few bottles of some great blackberry wine 'cause I didn't add potassium sorbate or a campden tablet prior to bottling. Now an equally great plum wine I just bottled has popped a cork-- I'm sure its the same problem. OK now I learned! However,.....is there anything I can do to stabilize the ones that haven't yet 'Popped'? Can I uncork and stabilize? Please elaborate. RnR

Yes, I'd recommend that. How long has it been in the bottle?

I'd dump them out into primary and add the p. sorbate. I'd also rerack into a carboy and wait a week or more to make sure the sorbate gets well distributed.
