Leftover concord wine

Degassed and added kmeta to 6.5gallon carboy..waited a week..then racked 2nd time to a 6gal carboy

The pic 1gal jug has the leftovers

Ive let that sit for a week..now bottom third is all sentiment

Any suggestions on what you would do with this??

Rack off the non-sediment wine into a 1/2 gal. carboy or 750ml bottles. Use it for future top offs.
