I ferment in a 10 gallon bucket and just snap lid on up to cored. I keep a towel over the bucket and lid. The only acid I add is lemon juice or pineapple juice, depending on what I have in frig the day I start. My water PH varies alot (8.2 to 5.5)You have a heater that goes "inside" the mead? Does your airlock fit snugly w/ the electrical cord hanging out the top of the carboy?
