How to I make a more tannic wine?

Try it the old fashioned, natural way.

If you use fresh grapes - Try maceration. Crush the grapes and allow to sit on the skins for a longer period of time. You might also want to try adding the grape stems during this process.

If you do not use fresh grapes, try adding good quality oak beads. This brings tannins to the party, but also provides a lot of beneficial flavor compounds to the wine.

Also worth mentioning that tannin goes a long way and isn't easily removed. Plus don't confuse a wine low in acid with a wine that needs tannin.
 
In a red wine, if you do not have grape tannic at hand, you can add elderberries.
Elderberries have a very dark juice. That might give your wine that nice dark colour you are looking for. And they contain a lot of tannin.
