Once your wine has finished it ferment and MLF(if you do it) and the airlock has gone still and you are pretty much bulk aging it how often do you taste test it? Every week, month, whenever you remember...?

Wine from grapes is a much slower process than a kit. It can take up to 2 years for the tannins to be tamed and ready to bottle. If this is your first time, taste at crush and be amazed at the harshness. Taste every few months as needed to see how things are progressing, a little more if your oaking and need to monitor the oak levels. Remember to monitor your sulfite levels along the way.
 
Once you are ready to bottle it, fill 6 to 8 of the 375 ml bottles. They are half the size of regular bottles. If you are curious about how it is coming along in the bottle but you can't wait a couple of years, open one of them and not a full 750 ml bottle. That way if it is not ready, you have saved a lot of wine.
