I am thinking of starting some plum and nectarine wine from whole fruit. I was wondering how many pounds per gallon it will take to make an all juice wine from each? I would like to not use much water if possible. All help is welcome.
 
It's usually 10-15lbs of fruit for a gallon, depending on the fruit.
Plums and nectarines are probably closer to the 10-12lbs than the 13-15lbs
 
I'd guesstimate ~2 gallons of plum and ~3 gallons of nectarine.
It's probably a little over that, but you'll lose some racking, so it should be about-that much when its finished.
