Has anyone ever attempted to make homemade red Vermouth. I was reading the the white wine Moscato is used to make it, along with carmelized sugar (for the color), wormwood and many other herbs. I am making 6 gallons of Moscato from the fresh juice and thought maybe a wild experiment might be in order for some of it.
 
Wormwood grows in our pasture....at least that's what they call it. Artemisia...I also have plants in my flowerbed of that family...called Silver Mound [Artemisia]


Go to a health food store and ask for some...they might have it.
 
Julia Child has been recommending using French vermouth (Noily Pratt) for cooking since the 60's. I always keep a liter in the pantry. It is especially handy when I just need a couple of ounces to deglaze a pan before adding stock to make a sauce.

It's also nice to have around when I go into a "martini phase" as opposed to a "scotch phase" or "bourbon phase" (currently sipping some Buffalo Trace bourbon).
