Hi all, I have had my wine tested and below are the results. I see
that I
need to make some adjustments. As a second year home winemaker I am
still learning and appreciate all the adivce I have recieved.. Does anyone have any suggestions to bring the
numbers into the ranges they need to be? These numbers are
after malo completion. I have been looking at adding tartaric to lower PH to around 3.4 or so. Considering that my PH on both is rather high, If I do that will it really throw my acid out of wack?
Petite Syrah:
pH = 4.2
TA = 5.3g/L = 0.53%
Cabernet:
pH = 3.93
TA = 5.7/L = 0.57%
