This is the first year I will have a workable crop of white and reds. Not a lot, but probably enough for a couple of batches. The problem I have is veraison started in early July here in south Texas and it looks like my week long fishing trip and harvest are about to clash! The question I have is what's the best way to store grapes for say 7-14 days post harvest, before I get in to crush and fermenting. I have a full size refrigerator available that is empty.
 
The fridge has worked well for me the last few years. The big grape growers/distributers do the same thing only they use a huge walk in fridge.
 
What's a gut feel for max time in fridge?
And what would be optimum temp?
 
Standard temps have worked very well for me. I have gone almost two weeks without any problems. Make sure they are harvested/stored dry.
