John--Here is whatI made with what figs I could had.
Used 2 qtsJuice (steam juiced)
64 oz White Grape Juice
pH 3.45
TA 6.25
SG 1.085
Adjust everything to your taste.
If I recall, had a hard time clearing so use enough Pectic Enz. and give time. I just tasted it and found it to be a little tart on acid side. ABV was 11.1%, Color is a lite amber. If made again I will keep TA to about 5 and maby have a more fruit flavor. If you have enough figs make it full body.
