Is it okey that fermentation is slow ?
My dandelion wine is on week number seven of fermentation.

Yes as long as it is still fermenting. I had an apply once that took 3 months before it completed fermentation.

Okey.

Any ide why the fermentation time varies this much ?

Is it actually still fermenting, or just slowly outgassing CO2?

What is your specific gravity?

Hello

Well the last two weeks the alcohol vol. has increased 0.3 % vol. So It's still fermenting, butt slowly.

Hmmm, in that case what is the temperature of the wine? Fermentation is slow when the temp is cool.

Steve

No, the temperature is fine. 18 - 22 degrees celcius.

I'd say too low on the temp. Raise it to 24-27 C and things will likely pick up. About 25 would be perfect. You also can aerate by stirring briskly twice a day. If you have a cover and airlock on, take it off and cover only with a towel. The added oxygen and higher temp should help.

There is an Italian wine that takes 5 YEARS to ferment out , and is only 7-9 percent alcohol when done. But I don't like drawn-out fermentations. In my mind, a nice medium ferment works best. There's too much chance for byproduct or bacterial contamination in a slow wine.
