NVM I misread the freaking recipe and apparently it's been way to long since I made a wine not from a kit.

First be aware that elderberries also add colour, so mI hope this is a white wine.

Next it will be hell to decide bhow much elderberries you should use as there are no figures around.

And they will impart flavor.
Elderberries have strong flavor so a bit will go a loooong way.

I would use powdered tannin which can be bought at winemaking supply shops.
