Dry/Candied fruit?

Hey there was a sale on dryed and candied fruit this week.
Was going to buy some but was wondering what fruit give the best body to the wine? what point in fermentation would i add them? and how many lbs?
 
Ive used dried elderberries at a rate of 4-5oz per gallon but they were really dry.. do some web searching should be out there some where..
