Given the option, I would choose the rubber or the reason stated. The harsh tannins will come from the seeds, later in the ferment. The less opportunity to pick up those astringent notes, the better (at least what I like to drink).I thought sure someone would call me on that.
I'm not an engineer, but after years of pilot plant work, I would think the rubber rollers would limit the crushing of the seeds. Thus limiting the release of oils and the arsenic contained in the seeds.
