I'm making my first 3 gallons of mead, using the WINEMAKERS RECIPE BOOK. Sweet mead calls for 2 campden tablets per gallon, dry mead calls for 1 per gallon. This is the only time I seen more than one tablet per gallon, can it be a misprint? If not why is the sweet wine calling for 2 per gallon?
 
As long as the mead is stabilized before sweetening there is no reason to add more then 1 tablet. The reason for the additional tablet is most likely because lots of mead makers try and out smart the yeast by adding extra honey up front and hope the yeast stops at its alcohol tolerance and they don't have to back sweeten.
