My recipe book says to wait 24 hrs after adding every other ingredient to add the yeast to country wines. Is this for the camp den tablets to neutralize or for all of the additives to blend thoroughly? I get impatient as a beginner to start fermenting right away and wonder if I pitch the yeast early am I killing off some of it and sacrificing my end product?

Yes. 1) Give the Campden (k-meta) time to kill other micro organisms; and 2) Time to dissipate the SO2 so it does not kill the yeast you add.
