One way to do this is put a balloon over the jar and poke a pin hole in the balloon. When fermentation starts the balloon will blow up and when it deflates fermentation is complete. Then you can put the lid on. This is an old technique used by some to make wine from a bottle of grape juice.

If you cannot find a bloom that fits over the jar use a plastic zip lock bag and a rubber band. You'll get the same effect.
