My ARGENTINEAN MALBEC.


Stabilized 11/24/07. It has been topped with inert gas and sitting on Hungarian Oak for almost 4 months since Satbilizing. I tasted a glass today and racked to a 5gal carboy to bulk age another 6 months or so.


I was left with 3 full bottles after the 5 gal carboy was full.


Oh and dispite a little bite, it was wonderful tasting already. Just think what 1 or 2 years will open up!
 
Looks really nice...you'll have a very nice wine with some ageing time on it..

Okei 1,
I note that you are using inert gas. I have been doing the same but no one else on this forum has indicated they are. I light of the recent news FVW newsletter, I'm frankly a little worried that I am not getting enough 02 to the wine (mainly almost none). Have you been doing this for a long time? I am a relative newbie trying to make sense of the art of this hobby.
Any thoughts on the 02 question?

I have only been using the inert gas for about 6 months (in 6gal carboys).
But now for no reason other than just not wanting to further risk any high end wines, I feel it is safer to just go to a smaller carboy (5gal)and top up all the way for longer term bulk aging.
